PIZZA:: SAUSAGE & CARAMELIZED ONION

 

NICK'S HOMEMADE SAUSAGE

 

4 lbs pork shoulder or pork butt

1/2 lb pork fat

2 tbs salt

2 tbs sugar

1 tsp black pepper 

1 whole head of garlic, peeled and chopped

2 tbs paprika

2 tbs rosemary

4 tbs fennel

2 tsp thyme 

1/4 cup wine vinegar (optional)

1/4 cup dry sherry (optional)

 

Grind pork with Kitchen Aide grinding attachment.

Mix all other ingredient with ground pork.

Put thru grinder again at a finer setting. You can now stuff in casings or prepare as Patties.

CARAMELIZED ONIONS

6 small onions cut into thin rings approx. 6 heaping cups.

Bake at 400 checking and stirring frequently until cooked down and brownish in color and sweet to taste.

Should take approximately 2 hours.

Should yield 2 cups

PIZZA 

 

Pre heat oven to 400.

Roll out a 14 to 18 oz ball of dough into the desired shaped pizza.

Drizzle olive oil, salt and pepper over the dough and spread evenly with your hand.

​

Spread caramelized onions evenly over pizza. Do the same with the sausage and mozzarella.

Bake in oven for 20 -25 minutes checking that crust has browned a bit and cheese is melted.

Remove from oven, slice and eat!
