
PESTO
3 cups packed fresh basil leaves, cleaned and put put in a salad spinner making sure to get rid of as much water as possible.
2 tbsp chopped garlic
1/4 cup pine nuts
1/2 cup grated parmesan or pecorino romano cheese
1/3 cup plus 1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
Blend in food processor. Done!
Serve on any pasta or potato gnocchi.
