FISH TACOS WITH SMOKEY AIOLI
1 lb white fish Haddock/Bass/Tilapia
1 cup milk low fat/no fat /or whole
10 corn tortillas 5 in (may use flour tortillas)
Fish batter
1 cup flour
2 tsp paprika
2 tsp chili powder
1/4 tsp cayenne
1 tsp salt
1 tsp granulated garlic
1/2 tsp Amarillo yellow color
1 tbsp cilantro leaves finely chopped or 1 tsp dried
* Mix all Dried ingredient together in bowl
In a deep sauce pan put 3/4 inch of vegetable oil heat until little water droplets crackle.
Prepare the Fish
Cut the fish into 1 inch cubes and place in milk, dredge in flour mixture and place in the hot oil until golden brown. Place on a dish lined with a paper towel to drain off excess oil.
Smokey Aioli
1/2 cup mayonnaise
1 clove garlic minced
2 tbsp onion chopped
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp ground cumin
1 tsp ground coriander
1 tsp smokey paprika
1/4 tsp salt to taste
1/2 tsp cayenne to taste
Honey Kissed Arugula
3 cups of baby arugula
1 tsp lemon juice
1 tbsp balsamic vinegar
1 tbsp honey
Assemble the Tacos
Spray pan with cooking spray or brush lightly with vegetable oil
fry tortilla briefly on each side to warm and until you see it darken in spots slightly. Place on a plate. Put a table spoon of aioli on the tortilla and place 2 or 3 pieces of fish on one side and some arugula on the other fold and eat!!
Note a little dollop of the aioli on top looks nice
