COD WITH TOMATO AND SAFFRON

1 lb Cod fillets

1 Roma tomato, diced

1/2 onion, diced

1 tspn saffron threads, crushed

4 tbsp olive oil

2 gloves garlic, minced


Salt and pepper cod fillets, set aside.

Saute garlic and onion in olive oil for 1 minute.

Add tomato and stir to mix. 

Add saffron and stir to mix.

Place cod fillets in pan with sauteed mixture.

Let simmer until fillets turn opaque and flip.

Simmer for a couple more minutes.

Serve with asparagus or your favorite vegetable, salad or ala carte.
