CHINESE SHRIMP AND BROCCOLI

1 lb shrimp, 16-20 count (or whatever you have), peeled and deveined

2 heads broccoli, cut into florets

3 tbsp garlic, chopped

1 tbsp fresh ginger, chopped

2 tbsp scallion, chopped

1-2 tsp crushed red chili

6 tbsp soy sauce

3 tbsp rice wine vinegar

1/2 tsp Five Spice powder

2 packets sweetener (Truvia, Stevia, your choice)

1/4 tsp salt

1/2 cup water

1 tbsp fresh cilantro, chopped

Method

Coat wok with cooking spray. Turn heat on high. Add broccoli to the wok and sprinkle with salt. Spray broccoli with cooking spray, fry, stirring constantly until browned a bit and cooked but firm. Remove from wok and set aside.

Spray wok, again, with cooking spray. Turn heat on medium. Place shrimp in wok and fry on all sides until cooked. Remove and set aside.

Spray wok with cooking spray. Place garlic, ginger, scallions and red pepper. Fry for 1 minute on medium heat. Add soy, rice vinegar, Five Spice powder, water and sweetener. Stir and cook for 1 minute.

Place broccoli and shrimp back in wok with mixture until hot.

Serve immediately topped with chopped cilantro.
